Sergio Martínez selected eight butts from among the Puerto Fino soleras aged in El Drago winery to achieve a Fino with greater structure and complexity. Located in the winery’s most humid part, which has the most exposure to the winds from the Atlantic, these butts offer a very saline Fino with marked low-tide aromas.
Gold yellow colour. Intense and bright. Vehement and revealing. Intertwining aromas of low tide and biological ageing, recalling the aromas of wine during rackings. Intense yeasty notes of breadcrumbs. Very dry and bitter in the mouth. Saline, with a vigorous, long-lasting finish.
