- 0.75 oz Fresh Carrot Juice
- .5oz Fresh Lemon
- 0.5 oz Lustau Amontillado Sherry
- 0.5 oz Eggwhites
- 0.5 oz Coriander Syrup
- 1/4 tsp Cynar

Preparation
Build all ingredients into a shaker tin, dry shake vigorously to emulsify the egg whites.
Add ice and shake a second time for 15-20 seconds. Fine strain into a cocktail coupe, express lemon oils on top of the cocktails, garnish with a manicured lemon spiral, suspended on the rim of the glass.
